The next level of food safety and hygiene training is Level 2, which is necessary for anyone who handles, prepares or cooks food in their role. At this level, training provides an understanding of safe practices and procedures, such as safe cooking temperatures and cleaning schedules. Courses at this level also cover how to control food safety risks through things like controlling contamination, maintaining personal hygiene and storing food correctly.
Level 2 courses can apply in a wide variety of settings. Some examples of employees who might need a level 2 certificate in food safety and hygiene are:
Chefs and kitchen assistants
Supermarket staff who work in delis or bakeries
Food and drink manufacturers in factories
Catering staff, including those in hospitals, care homes, schools and prisons
Takeaway and burger van employees
This is suitable initial training for food handlers but not to the same depth as REHIS certificated courses.
To comply with legal regulations we recommend a REHIS SCQF Level 5 or Level 7 certified course for businesses operating in Scotland
This course will provide you with current food hygiene information applicable to workers in low-risk environments or low-risk job roles where food isn’t handled directly.
This level of food safety and hygiene training is the most basic and gives learners an introduction to the core concepts of food safety including, food safety hazards, cleaning routines, cooking temperatures, cross-contamination, personal hygiene and food storage. Level 1 is suitable for staff who don’t handle food directly, or only handle low-risk or already packaged foods.
Examples of employees who may benefit from Level 1 food safety training include:
Front of house staff such as waiters and bartenders
Back of house staff such as kitchen porters
Retail workers who sell or stock food in their role
Food delivery drivers
Warehouse staff

Duration 4 days
The REHIS (Royal Environmental Health Institute of Scotland) Intermediate Food Hygiene Certificate course is designed to provide individuals with the knowledge and skills needed to ensure food safety and hygiene in various food handling environments. This course covers key areas such as foodborne illnesses, contamination prevention, food storage, personal hygiene, and the legal requirements for food businesses. Participants will gain an in-depth understanding of food hygiene principles, enabling them to effectively manage and implement food safety practices in their workplace.
Please note, although all of the modules can be accessed online, the exam is required to be sat face-to-face at our training centre in Westhill. However, there is the option to complete this over teams.
Duration – 6 hours
This Elementary Food Hygiene course, accredited by the Royal Environmental Health Institute of Scotland (REHIS), is designed to provide essential food safety knowledge for individuals working with or handling food. This course is ideal for those seeking a solid understanding of food hygiene practices, particularly in the hospitality, catering, and retail sectors.
Please note, although all of the modules can be accessed online, the exam is required to be sat face-to-face at our training centre in Westhill. However, there is the option to complete this over teams.
Duration 5 hours
This is a mandatory course for industrial food handlers. Learn how the food safety management systems in place, contamination, potential bacteria and prevention methods to ensure safety at your workplace.
You will learn the information about the laws local authorities must follow to ensure the safest food hygiene and safety practices are in action. You will be able to uphold good hygiene for yourself to ensure you are fit to work in an industrial food environment. You will learn to identify the different types of contamination that could occur when directly handling food in a factory. This course will teach you the tools and substances required to keep your industrial food business clean.
